A lady remarked to a school official that the cost of provisions in the Confederacy was getting very high, butter, especially, being scarce and costly. \u201cNever fear, my dear madame,\u201d he replied. \u201cTexas alone can furnish butter enough to supply the whole Confederacy; we\u2019ll soon be getting it from there.\u201d It\u2019s just as well to have this sublime confidence.<\/p>\n<hr \/>\n<p>Note: To protect Mrs. Miller\u2019s job as a teacher in post-civil war New Orleans, her diary was published anonymously, edited by G. W. Cable, names were changed and initials were generally used instead of full names<em>\u2014<\/em>and even the initials differed from the real person\u2019s initials.
